The restaurant’s specialty sushi, consisting of vinegared rice mixed with ground Japanese pepper and yuzu stuffed into a hollowed bamboo shoot.
The bamboo shoot is slowly cooked and seasoned with Japanese sake and mirin cooking wine, so it can be eaten as is.
It is a very rare type of Kyozushi (Kyoto style sushi) that can only be eaten at this restaurant in Japan.
